OP here--yes, I'm seeing not so great reviews of cajun grocer for the reasons people have mentioned. I remember having one years ago and liking it, so I remain optimistic. I have heard the best bet is to get on fresh, but I haven't been able to track down a local butcher who prepares them; they seem to have gone out of style.

Mine came in a large meatloaf shape like this. It really wasn't spicy, interesting, crunchy. The turkey, chicken, duck parts weren't readily distinguishable. No crunchy exterior. It fell flat as a party dish. No one raved (and I was thinking "Salmonella" the entire time). No, when they first came "out" about 11 years ago you could order them from Cajun Grocer, frozen. I did one of theirs for a party and have to say was not impressed. It comes to you looking like a giant meat loaf. You pop it in the oven. The consistency was mushy and I never did get the crusty turkey skin exterior. Won't do it again.
