There are a lot of good veggie websites. Try Thug Kitchen for vegan. It's kind of ridiculous but the food is really good.

I also love Food 52.

This is a great cookbook. I usually doctor recipes slightly to add more flavor, but there lots of good, kid-friendly recipes here.

Don't like Mark Bittman that much.

My favorite is Olive Trees and Honey, which is Jewish vegetarian recipes. Awesome soups, stews, very international, and tasty dishes for every vegetable. Many are vegan, too, but all hearty and delicious. Several of our family staples are from this book.

Heidi Swanson's 101cookbooks.com website is fantastic! I've been cooking recipes from there for years, and have yet to find one that I don't like. Many are in the regular rotation at our house! Deborah Madison's books are great, and I'm a Moosewood fan from way back. (The 1970s approach appeals to me sometimes, and the chili is amazing!)

I think that Bittman's *How to Cook Everything Vegetarian" is the one I use most, probably because he's really good about including variations and modifications. For instance, the bean burger recipe is easy and simple, and he lists many ways to change it. A lot of the recipes in there are like this, which I appreciate, especially when I'm trying to throw a meal together with what we have on hand + whatever was in the CSA box!

Plenty by Ottolenghi is my absolute favorite. His recipes do call for a very well stocked pantry though.

I like the sauces section and the gratins chapter the best. What I like about the book more than any particular recipe, though, is that its organized in such a way that if I have a random vegetable I want to cook with but am getting bored of my usual preparations, it will quickly show me a few new options. I haven't done a CSA before but suspect its a really good book to own for those.
