My wife makes a granola likes this (without the eggs) due to food allergies. She toasts the oatmeal in huge batches, and then has it for breakfast. Recipes are easy to file on the internet. I also make oatmeal cookies that I eat for breakfast. I cut down the sugar by half to make it more breakfasty. It is a guilty pleasure to have cookies for breakfast, but they are great on the go and you can make and store nice batches.
