Chili with Beets and Greens
Serves lots of people

Ingredients

1 onion, chopped
1 bell pepper, chopped
1 lb ground turkey
1 bunch of beets (approx 0.5-1 lbs)
2-4 cups of cooked beans, if using canned beans, make sure to drain and rinse well
beet tops
turnip tops
3 cans tomato sauce (15 oz each)
2-4 cups bean broth (or vegetable or chicken broth)
1/8 tsp cayenne
1/4 cup chili powder
2 tsp ground cumin
1 tsp dried oregano
salt to taste
sugar if needed
cheese (optional)
sour cream (optional)
To begin, heat a large soup pot over medium heat and add a tablespoon of olive oil. Add a chopped onion, green pepper, and a pound of ground turkey and cook until the turkey is browned.

Cut the tops and tails off of the beets, chop them into bite sized pieces, add to the pot, and stir. Add the beans and stir.

Chop the greens and add to the pot. Add the rest of the ingredients and simmer for 1.5-2 hours. The reason for the large range of broth is because you may have to add more as it cooks if it is getting too thick. Start with 2 cups of broth and use your judgment and preference as you’re cooking the chili. Taste near the end of cooking and see if it needs to have more salt or some sugar added to balance the acidity from the tomatoes.

Scoop into bowls and top with cheese and/or sour cream.

Notes

You can shred the beets instead of cubing them if you need to hide them.
You can add shredded carrots as well or instead of the beets
Any sort of greens would work in this chili– spinach, collard greens, kale, etc. Just make sure to chop them finely if they are harder greens like the collards.

really? Somehow I thought beet season was in the spring. I need to pay more attention. Thanks!
