Subject: Ideas for 5 day trip without kids?
I second Quebec (City). There are direct flights from Dulles. Went there this past Labor Day wkd with DH and had a great time. The food is outstanding!

If I only had five days, I wouldn't want to go international, just not enough time to really enjoy it. Our best trip ever was San Fran/Napa/Sonoma. Highly recommend that if you haven't been before. I love New Orleans and am from Louisiana but not sure you could fill five days? It's mostly an eating/drinking town and I'd get sick of that after two or three days. More sites/scenery in San Fran.

If you want to spend the money, our favorite place is upstate NY at "THE POINT." Romantic and beautiful in summer or fall.

I think travelling should be done as a family.
Then go travel with your family. Millions, literally MILLIONS of people disagree with you though, and their kids turn out to be perfectly happy and well-adjusted people. I happen to disagree with you. It's not like OP is going to chain her kids to the sink with a hunk of cheese around their necks. They'll get a vacation with their beloved grandparents.

It depends if you like hot weather or cold.
Hot Weather: Carribean, Belize, Smaller islands in Puerto Rico. We went to a tiny island in the Bahamas. The beaches were isolated but just a handful of restaurants. You spend about 6 hrs traveling+airports, so you have half of that day to relax before venturing out.
Problem with Europe is, by the time you get there, you lose a day-sort of. They are 6+ hrs ahead.

And what a gift to give your young kids, showing them that Mom and dad love each other and want to spend time together, that their grandparents are very well able to watch and love the kids and develop their own relationships with their grandkids, and that you will always come back....WONDERFUL!!! what time of year? What activities do you like?
Bermuda - there are some good resorts with good food, spas, etc. Good golf and tennis.
Skiing - lots of resorts within a short drive from SLC airport.
Dude ranch - vary your location with the time of year.
There are guided river rafting trips you can do that include pretty upscale food cooked for you.
Not sure if Vermont Bicycle Tours does any short trips, but they lead very active trips with nice accommodations and good food. Shorter trips might also have a younger clientele than their 2 week trips.
FWIW, I think it is important to the family that the parents have time away from their kids to reconnect and remember what they like about each other. Bravo to you for taking the time to keep your marriage healthy.
