Apple crisp
Apple pie
Apple cake or muffins

I once had a side dish with apples and sweet potatoes... it was really sweet but it was good. If you search for recipes, I'm sure more ideas will come up.

I often thinly cut apples into oatmeal while I am cooking it to make apple oatmeal.

I make apple crisp with half flour and half gluten free oats. It comes out really good that way.

I'm not sure how to link from my phone but we have a ton of apples too. Last night I made a cinnamon and chili rubbed pork roast with Apple salsa. It was delicious! Google mels kitchen cafe for the recipe.

I made a tasty apple sausage risotto on Monday.

I adapted it from this recipe: http://projects.washingtonpost.com/recipes/2007/10/03/apple-and-sausage-risotto/

My main change is that I prefer chicken stock to broth for risotto and I used on a tiny bit of cider, otherwise it was going to be too sweet for my taste.
