I finely grate/chop garlic, add a tablespoon of vinegar/lemon juice, and then slowly pour in some olive oil (about 1/4 cup) while mixing well. Depending on the meal/salad ingredients, I may add some other things (like parm. if I am eating Italian). The dressing will keep for a couple of days in the fridge, and if the dressing separates, you can quickly remix). I also salt the salad.
