PS the cooling rack makes these cook evenly on the bottom, too. You can prep the chicken ahead of time for a faster meal.

I have been making my own for a few years now and they are really easy. Slice up chicken breast into thin nugget sized pieces; dip in buttermilk (or milk with a little vinegar); then coat with panko mixed with parmesan cheese and spices; put on a cooling rack in/on a baking sheet; spray with Pam; bake at 400 degrees for 20 - 23 minutes.
