1. I make these beans a lot and it only requires opening a couple of cans and packages:

2 cans of pinto or black beans, drained but with a bit of liquid left
about 1/3 of Trader Joe's frozen fire-roasted peppers and onions
a can of diced tomatoes (usually something seasoned, like Rotel with green chiles)
1 tbsp cumin powder or to taste
1 tbsp chili powder or to taste
a little salt and pepper

Saute all of the above together until it cooks down, with a little oil. Use it as a filling for burritos, quesadillas, or over rice. I also like to just dip tortilla chips in in.

2. A favorite lazy and "junk food" kind of meal for me is a sandwich made with veggie bologna slices, cheese, cucumbers and tomatoes. I put mayo and mustard, and the cheese has to be the Kraft singles type. I have no idea why this tastes so good to me!

3. Veggie burgers - the Garden Veggie and the Black Bean from Morningstar Farms are my favorite. I add a salad of tomatoes and cucumers with some olive oil.

4. A salad with cucumbers, tomatoes, avocado, mushrooms, and feta or any other type of cheese. Olive oil and a little vinegar for dressing. I could eat this every day!

This time of year my favorite lunch or dinner is basil.tomato,mozzarella sandwich or salad. Drizzle with a little olive oil and balsamic vinegar. Yum!

veggie subs -- I saute peppers and onions in a big batch, with some soy sauce, or balsamic vinegar. Eat in crusty rolls, or use as fajita filling.

OP here. Thanks for the ideas. I went to the store to help myself get out of this rut! Stocked up on spinach, beans, pitas, etc.(you know, I did buy this stuff regularly in the past; it's like I forgot how to make food).

do you do eggs? If so, saute up some veggies (I usually use whatever i have from the farmers market - onions, kale, peppers, asparagus), for a minute or two, scramble up an egg with some milk then cook. when it's almost done warm up a whole wheat tortilla with some cheese in the microwave and you have a easy egg burrito in less than 5 minutes.

One night or weekend when your husband is around you could make a larger meal that keeps for few days - like lentils with veggies, soup, or prepping a crockpot meal, and you will love yourself for it later.

And if you're a pizza person, you can make your own with whole wheat dough and just go a little lighter on the cheese or mix up the toppings. For instance, I sometimes make a pizza with sweet potato slices, a bit of parmesan and rosemary...and a whole pizza will get you through a few days.

and +1 for black bean tacos.

I've had really good luck getting my toddler involved in cooking. He helps shuck corn, or measure out rice/quinoa/beans and water, mix together canned beans and little bowls of chopped up tomatoes and food for a bean salad.... Maybe yours would be interested as well?
