Just made stuffed peppers on the grill tonight

Chop up bell peppers, onion, garlic, mushrooms
Sautéed add I can diced tomatoes chopped herbs salt and pepper
Put aside, sautéed ground beef (I used 1/2 beef and half lentils you could do just lentils)
Add veggies back in, add some tomato sauce or chicken stock simmer for 5 min
Place in halved peppers top w parm and or mozz cheese
Grill on med about ten minutes
My 4 and 2 year old will both eat this, I give it to them over pasta or rice

So weird- I just tried this recipe this week from a vegetarian cookbook. I love the spices but it just didn't come out right. Bland and not right together. Too bad- so disappointed!

Sorry, but a legume is a subset of the vegetable family. While you may want to differentiate legumes from leafy vegetables or some other category, they are in fact vegetables.


Citation? Peanuts are legumes - they are not vegetables. Both peanuts, lentils, and other legumes are categorically closer to pulses and other grains (unless you consider grains vegetables). It doesn't mean legumes don't contain many of the same health properties of vegetables, but they're not categorically classified the same.

Burritos - stir fry veggies and blackbeans, like corn, red pepper, onion, etc. You can add lettuce.

Tempeh stirfry - stir fry with garlic, grated ginger, soy sauce, and chinese style veggies, maybe broccoli.

Corn, black bean, and garbanzo salad - put olive oil and red wine vinegar on as a dressing, maybe some fresh parsley and a little diced onion.

We eat a lot of veggie meals, but they are hearty, like homemade beans & rice, or homemade pasta sauce.

Veggie tacos- black beans, corn, cheese, avocado, salsa in a tortilla. Veggie lasagna- I put alot of chopped spinach into the ricotta mixture and use whole wheat pasta. Veggie stir fry- bok choy, snap peas, carrots, water chestnuts, broccoli, red peppers, onion, garlic, stirfry sauce, rice. Veggie pizza- I just buy premade wheat pizza crust, top with sauce, skim mozzarella, mushrooms, olives, diced tomato, peppers, onion, zucchini, etc. the kids like to top their own. Italian veggie soup- saute garlic, and onion in olive oil, add 2 cans stewed tomatoes (I like the Italian seasoned ones for this soup), zucchini, cauliflower, Italian green beans, veg bullion, water, and cheese tortellini. Simmer, serve with crusty bread. Veggie chowder-sauté onion in butter, add diced potato, carrots, and water to cover, cook till veggies are almost done, add a bag of frozen corn or 2 cans of sweet corn with the water, one can cream corn, and one can evaporated milk shaken with 1tb cornstarch, bring to a very light boil, boil till thickened, salt to taste.
