OP here. I remembered that the pork allergy person also hates salmon!

I have decided to go with the medi/mezze "bar" idea, as everyone is arriving at different times. I was going to do chicken tinga tacos but I think it'll be a bit warm for that.

OP, I'm paleo and I wouldn't expect a host to know all the stuff to avoid. If you have a bunch of plain veggies and don't coat your meat with bread crumbs, I can piece together a plate just fine. I normally don't eat lentils or beans, but when out and a guest at some one's home, I wouldn't be picky about that. Your friends can just eat around it if they're really strict about the legumes thing.

I would do fish.

sounds like any poultry dish with roasted veggies would work. We pan grill chicken thighs with Indian masala mixes and roast brussel sprouts in the oven.

I second Mediterranean bar.

Lots of veggies (tomato, cucumber, peppers, lettuce)
Feta and/or haloumi
Olives
Hummus
Baba ganoush or imam baldi (easy to make), chilled
Gluten free orzo "pasta" salad
Falafel
Rotisserie chicken pieces with lemon and parsley
Pita bread (is there gluten free pita?)

Keep everything cool or room temp and raw (veggies) and its super easy.

You could do a medi version of a "taco bar" - grill chicken and beef or fish on kebabs (marinate in evoo, lemon juice, garlic and an herb like oregano). Grill tomatoes and onions and serve on side along with rice and feta and olives. You could also have hummus and pita.

- to keep salmon warm, keep it in the oven with foil on it. the veggies you can keep lids on over the stove.

OP, I missed the part about people arriving at different times so you want something that can sit.

I'm not sure what's allowed for Paleo eating.... nuts? olives? dried fruit?

What about this Moroccan chicken-apricot-almond-olive crockpot stew, and have the Paleo person pick out the olives and chick peas if they offend?

You could serve rice instead of couscous I should think?
