We always do a 'foil packet dinner' when we camp. No pots and pans to clean and there are alot of options. I've done fajitas, beef and mushrooms in gravy, potatoes and onions with butter and herbs, kielbasa with onions and peppers, basically anything you can double wrap in foil and put on a grate above the fire. I prep at home and just put it into ziplocs so I can just pull the packets out of the cooler and put them on the fire. We do this the first night so the good food isn't sitting in a cooler longer than it needs to. The rest of the time we do easy camping food.

*Smores - if you are doing these for kids - nice in theory but messy, requires a longer cool down then you realize from the fire, and someone gets burned. If the kids are really young skip them. Never skip the Smores. They are messy but the kids love them. I've been doing them with my kids since they were old enough to hold a stick over the fire and we never had an accident. Just be careful.

CBC stew -- equal parts canned corn, beans and chile con carne. An old Girl Scout standby but really delicious topped wiht grated cheddar cheese!

For lunch I make pesto tomato mozzarella sandwiches on baguette. (I'm high maintenance)

For dinner, we have Pinot Noir, baked potato, steaks. Hot dogs for the kiddos.


These take forever over a campfire. We did them once and would never do it again.


Wrap them in foil and bury them in the coals. Takes a little while, but worth it.

If you rub dish soap on the outside of your pot first, you can put it directly in the coals, and the black marks come off easily with water afterward. This is great for the outside of an Italian-style espresso pot. Good coffee around the campfire.

Don't do it for your cast iron, though--it'll take off the seasoning. Who cares if the cast iron gets blacker?

We do everything to avoid cleaning dishes. Over a fire, we like to do rack of lamb, steaks, chicken and hamburgers. Corn on the cob, bell peppers, onions, zucchini are great for the grill. Enjoy!

Keeping things clean and cold is really the hard part. The cooler fills up so fast, that you're not going to want to bother with "a touch of cream" when you're there with no fridge or sink. And yes, cooking things takes a lot longer over a fire than a Viking.


I am not ready to compromise on flavor. If that means there is no room in the cooler for little Johnny's medicine, then so be it.

I don't know what "really young" is, but any campfire without marshmellows is a crime in our family.
