Buy some sliced turkey breast at the deli. Put it on whole wheat/whole white wheat bread. Buy some peeled baby carrots and put that on the side. Give the kids a glass of milk.
If you can't even make a sandwich, rotiseree (sp?) chicken and grapes or carrots work just fine. My grocery store also has a variety of premade, precooked meat loafs, chicken breasts, sushi, and pork chops that can just be microwaved.

My kids like "cereal for dinner" night--we do it maybe once every two months. Instant oatmeal is a great option, too. Just use the usual instant stuff in a big tub, mix in a bit of water, pop it in the microwave for 2 mins. Don't even have to use that gross flavored stuff in packages--plain ol' oatmeal w honey and brown sugar and a banana sends my kids to the moon with joy.
