There are many people who don't do organ meats, so chopped liver is only going to appease a portion (I'd say at most half) of the diners.

One side that is always a hit for us at Seder is caramelized onions. Pearl onions cooked in schmaltz until they caramelize and turn brown. Heavenly.

Also a fish course instead of gefilte fish. Although I love gefilte fish, quite a number of the guests we dine with don't, so an alternative is always provided. One of the family makes salmon croquettes that are wonderful. That makes sense -- if meat will be served at the main meal, they may not want dairy appetizers. What about some sort of eggplant dip and veggies?

op here-this is not a vegetarian seder so I think I best stick to dairy free-looks like some variation of vegetables is my best option?

Sometimes we eat pieces if caramel matza crunch before the meal.
