There are many people who don't do organ meats, so chopped liver is only going to appease a portion (I'd say at most half) of the diners.
One side that is always a hit for us at Seder is caramelized onions. Pearl onions cooked in schmaltz until they caramelize and turn brown. Heavenly.
Also a fish course instead of gefilte fish. Although I love gefilte fish, quite a number of the guests we dine with don't, so an alternative is always provided. One of the family makes salmon croquettes that are wonderful. I don't have the recipe, but while looking for something similar, I found this which sounds good:
