Most open houses are on Saturdays, so not really a good plan for spring break.
Most schools do tours during the week. We are doing 8 during spring break. In fact Saturday is tough. The school we are visiting on Saturday only has a tour but no info session and the admissions office isn't open. Quite a few we are looking at don't do Saturday tours. We did find that BC, being a good catholic college, doesn't do tours from Thursday - Monday over Easter but plenty of others are open.
PP which schools are you looking at that only do Saturday tours?
My DD got in early admission to Rutgers & UNC-Charlotte. Both have their upcoming open houses on Saturday. We're also visiting Drexel (Sat) and UMD-CP (they do have weekday options). This is not to say that you can't do campus tours, so OP might still find it a valuable use of spring break time. I think I would rather visit the schools when students are actually there though.

I bet you learn more about a school from visiting when they're in session, sitting in on a class, and taking a regular tour than from a Saturday open house.
Yet to be on a college tour when they let you sit in on a class.
