Really- we do this about once every 4-5 weeks. Breakfast for dinner and "dinner" for breakfast. It is usually something like pizza for breakfast, but it is a fun change from the norm. We usually eat very well-balanced meals so it makes it extra fun to throw out the rules sometimes.
You can do eggs in a variety of ways (scrambled, fried, etc), pancakes, waffles, toast, omelettes, breakfast casseroles... pretty much anything you'd like. We typically do pancakes and eggs (and sometimes bacon).
