as other have said, do not pay. i wonder if you could also make a list of what needs to be done, send them a letter listing the work that needs to be done, and giving them a deadline, adding that if they do not do it by the deadline you will hire somebody else to finish the work and deduct that cost from the payment you still owe them

DO NOT PAY THEM ANY MORE OF YOUR MONEY. Ever wonder why the insurance company is holding 1/3 for 10% of the work. Its because they know that if they hold less it won't get done.
If they failed to give you a schedule then you should presume that it is due when completed. I can assure you that it will cost you more than 10% of the total to have someone else do the last 10% of the work.

OP here, thanks for all the feedback.
We are going to leave reviews of the contractor. The frustrating thing is the subs are awesome! We've done one other remodel and one other major repair. Those contractors were much better to work with, but the quality of the actual work didn't touch these guys! My husband is super, super picky and he's been very happy.

What a crappy contractor. Please do us all a favor and go on checkbook/angie's list/etc after this is all done and review them.
this. if they are pestering you for payment and refusing to finish the job, you can imagine how fast they are going to finish it if you pay them now. if you pay them, you will never see them again.
and please, give a review of the contractor, so others will know to avoid it
