When my DD was undergoing Chemo, my mother's college friends gave us a gift certificate to Take-out Taxi. We were able to order as we needed. Some night we had a lot of folks at the hospital, some nights we only had me so it was good to be able to chose what we wanted. Also PLEASE, PLEASE, PLEASE no lasagna or ziti - I know it freezes and reheats well but it seemed like everyone made it for us and it gets old quick.
Please also consider making small separately frozen portions - I didn't eat much when she was in the hospital, neither did DH.

Simple food will probably be more useable; the things you have listed are probably ok for (some) adults but most kids won't touch them. Right now the parents can't be in the situation of having to make something different for the sibs. You should also think of making daily fare, rather than things that are elaborate; you don't know how the parents are feeling physically from all the stress they are enduring -- a bowl of soup, pasta, or grilled chicken that they can throw onto a pita may go down easier than olive bread, whole grains etc.
