I make desert for myself which is basically apple pie filling without the crust -

very small amount of butter to sautee in
chopped apple with skin on
dash sugar (really small amount), salt, cinnamon, nutmeg

Serve with 1/4 cup of ice cream or frozen yogurt or eat plain.

Google smitten kitchen's apple muffins. They are made with whole wheat flour and yogurt. Sooo tasty.

I have a great apple bread recipe at home. Not all too healthy, but it is delicious.

Apple fritters and caramel apples are great this time of year. Apple pie although that's not so different from apple crisp.

I often add chopped apples to stuffing. Since your husband doesn't eat meat, make a pan of dressing instead.

OP here. I will def try the dutch baby. I was looking for baked apple dishes like that more than applesauce and also DH does not eat meat so the chicken dishes are out. Thanks.
