I can't speak for the Striiv, but the Fitbit is accurate and it becomes more accurate as it "learns" your body.
Obviously you enter your height, current weight and goal weight, but you can also measure your stride if you know you take larger (or smaller) steps. It will tell you what your calorie intake should be based on your goals and activity level. For example, I am at a desk for 8 hours per day, so my calorie intake is low to compensate for my sedentary lifestyle. Over the course of the day, if I am more active, my daily calorie allotment will increase. Similarly, if you are moderately active and have a day where you sit on the couch for a long period of time, your calories will be adjusted down.

You can sync the Ultra, but you need to be within 15ft of the USB charging base of the Ultra for it to sync wirelessly, no Bluetooth. It also has to be charged every 5 days or so. The "One" will sync to your bluetooth device and has a watch battery so recharging is not necessary.
