Are you anticipating people dipping their crackers into the dip, or spooning some dip out onto a plate? Just asking... I have some very, very celiac, smell-gluten-and-go-to-hospital relatives... the gluten-y crumbs from crackers sitting in the dip would seriously make them ill.
Re green salad, most commercial dressings have gluten in them. I would just make sure to have oil/vinegar on hand, or whip up a quick basic viniagrette.
I also vote for flourless chocolate cake!
While having cracker crumbs in dips can affect people with celiac, it is pretty ridiculous that someone would smell gluten and have to go to the hospital. You do not have a reaction to gluten like being allergic to peanuts or shellfish. It is hurting your intestine and your symptoms can vary with eating gluten products. If that were true, people with celiac could never go to a restaurant. Since I have a child with celiac, I can tell you that is far from the truth.
