Grilled cheese sammy's ... good loaf of bread, meat of your choice (we like turkey or ham), good cheese and a hot pan. To make them extra delish caramelize some onions or get a tapenade to spread on the bread. Can't go wrong.

OP here. Thanks for so many ideas! We have just been in such a rut! DS has food allergies, so he usually eats a separate meal and we eat after bed (since he wants to eat what we eat and we don't want to avoid everything he is allergic too right now since he is too young to understand why he can't eat it). I'm bookmarking this for once the baby comes too!

Maybe I missed a later post by the OP on the age of the oldest? Per the original post, it looks like the OP is seeking ideas for her and her spouse, but bread, cheese, meet, and vegetables are reasonable for a kid, too. Add fruit and yogurt for desert.

Other ideas: paninis (I love mozzarella with pesto and roasted red pepper); an omelette with a side salad; steamed broccoli blended with chicken stock, a little pepper, and your preferred cheese for a creamy soup (you can even steam with a little water in the mirowave to cut time). Not sure how you feel about frozen foods, but we stock up on trader joe's meatballs, and then I will serve with pita, garlic rice (I buy those in pouches from costco that are ready in 90 seconds), and a quick yogurt sauce (mix 1/2 cup yogurt with a tsp each: red pepper flakes, sesame seed, garlic salt, oregano); those same garlic rice pouches are great sauteed with half a chopped onion, a can of drained garbanzo beans (or whatever legume you want), a dollop of pesto, sliced roasted red pepper - works as a standalone rice dish.

Sliced fresh bread (baguette or tosca loaf), slices of prosciutto, cheese, some olive oil/balsamic for dipping, and cherry tomatoes or whatever wash-rinse-eat tomato looks good. Add glass of wine to that once baby is down.

slice up a couple cooked boneless chicken breasts, sautee a package of coleslaw mix and top them with a jar of ginger/teriyaki sauce, boil half a pound of noodles (linguine, spaghetti,whatever) toss it all together. easy,cheap, tasty

Cut up chicken into cubes, quarter an onion and a few tomatoes. Put in a baking dish. Pour a jar of Indian simmer sauce over, mix and bake for 30 minutes. Serve with rice and plain yogurt.

Do you have a crockpot? There are so many recipes that you can do. Right now I have 4 chicken breasts cooking in my crockpot with some broth, a little seasoning, and a bay leaf. After 4 hours on high, I'll shred the chicken and be able to make multiple meals from that:
salad with chicken
chicken tacos
baked potato with BBQ chicken on top
crescent rolls stuffed with chicken, cheese, and veggies

I'll run out of chicken before I run out of meal ideas!

Black beans and rice: put the rice on to cook. Saute up an onion and some garlic (and some chopped jalapenos if you like heat, leave them out if you don't) in some olive oil. Add in a can of drained black beans, about 3/4 cup of chicken broth, and some cumin and oregano and salt and pepper. Let it simmer as long as the rice takes to cook, then spoon over. I usually put some sour cream on top and maybe some mashed up avocado, but you can leave it off.

Calzones: Buy some packaged Italian meats at the deli- salami, capicola- it usually comes in a package already sliced and everything. Get a can of refrigerated pizza dough. Lay out the pizza dough, stack the meats and some provolone cheese, then wrap them up and bake them at the temp the dough says on the package. Brush some olive oil on top and sprinkle with Italian seasoning and parm cheese. Serve with marinara for dipping.

I love quesadillas and make them for myself all the time as a to go food.. We pretty much always have cheese, beans, and corn tortillas. I chop up some tomatoes too and add chicken and corn if we have leftover in the fridge. For veggies I make a small salad or just eat carrots/peppers if I'm in a big hurry. It's pretty good for something that takes 5 minutes.

Chicken breasts or pork chops -- brown first, then dump in crockpot with a jar of barbecue sauce poured over the top. Simmer all day on low and serve at dinner.

Frozen turkey meatballs (I like trader joe's) with either marinara from the jar or sweet and sour sauce (heinz chili sauce and small jar of apricot jam). Cook either on stove for 20 minutes or better yet, in the crackpot on low all day.

Chicken breasts marinated in balsamic Italian salad dressing

ALSO (sorry, PP AGAIN) -

Steak is super fast!

Rib eye is the best, or you can do NY strip. And tell him you don't rinse steak before you cook it.

BROIL in the oven (use the 2nd rack down - situate it right under the burner).
About 8 minutes each side.

McCormick makes a Montreal steak seasoning that's decent too.

ALSO,

Giant sells pre-seasoned Salmon (3 kinds) that's wonderful - just bake on 400 for 25-30 minutes and serve. Use frozen microwave veggies as a side.
