I prefer to use pole beans with salt pork. They take the flavor better than green beans.

Don't use too much water! About an inch below the green beans. Andthrow in some new potatoes.....

Nope, after an hour they will be soft. If they aren't transparent boil longer! Don't cook the bacon either, just throw it in raw. It will be cooked and the slow release will help it infuse with the green beans.

Ooh! That sounds really good, and I have about three pieces of nitrate free bacon waiting for me to do something with them. So you don't soften the onion in the rendered bacon grease first?

Beans, chopped onion, couple slices of bacon, salt and pepper, boil for about an hour. ALL ingredients necessary for wonderful green beans.
