I don't know that fried food is always all that bad. I tried a chicken nugget recipe off America's Test Kitchen and it seems much healthier than the baked processed chicken nuggets you buy frozen or in a package. I also read something somewhere that the amount of oil that is absorbed is connected to the amount of time and type of batter that is used. If you deep fry things that are smaller and take less time without super heavy batter it not that bad.

If you like fried veggies try tempura batter. It crunchy but lighter and doesn't have as much of a heavy feeling afterwards. Good things for tempura include broccoli, onions, zucchini, sweet potatoes, carrots, green pepper, shrimp.

I've never mastered "frying". I make fried chicken, but I always lightly fry it in olive oil. this kinda cracks me up, like I am trying to convince myself this is healthy. I should just suck it up and buy a deep vat to fry everything in.
