Oh my yum. I'm always looking for cold bean salads. I'll add this to the list. When you say white beans, do you mean cannelli beans? Do you use any sort of dressing? Such as ovo and lemon or something like that?


I did mean cannelli, which I like because they have soft skin, but canned northern beans can work too. I make a vinaigrette with evoo and red wine vinegar or any Italian- like dressing I have on hand. I also do one with a dijon vinaigrette, cucumbers, red onion and garbanzos which is good.
