If you have any access to Eastern Market, the produce seller on the south end of the building close to the bakery at the end sells amazing homemade stinky kimchi and we are addicted to it. It's just sitting there in small plastic tubs where you check out, among the produce items.

The key is the tasty kimchi since it's the main ingredient and if u don't like spam go with chopped bacon. Bacon does it as good as spam. Koreans don't just put kimchi in kimchi fried rice most of them put either spam or sausage. If u r a cheese person putting in mozzarella cheese would make it taste more like younger generation version of kimchi fried rice. If u r putting in bacon put pineapple as well and call it Hawaiian kimchi fried rice and will taste as good as the traditional one. If u like the traditional taste of it then use sesame oil, if u dont care at all then using margarine will make it taste flavorful!! Btw I am a cook who works with kimchi.

I am OP and the way I make it is I steam white rice and when it's done, I pour a couple tablespoons of vegetable oil and about a tbsp of sesame oil into a very hot pan. Then I throw the kimchi in and some bean sprouts and let them get hot and then put the rice in and mix it all together. At this point I also usually add some soy sauce, maybe another little bit of sesame oil, and some of that red chili oil you can get at Chinese restaurants because even the spicy kimchi you can get in stores is not spicy enough for me. Then I dump it in a bowl and put a fried egg on top!

Yeah when I was at the Safeway I stopped at the girl who worked there that I asked about it said she used to work at a Safeway in DC and they had it, but this store did not. This was in Reston, VA (I don't live there, just was in that area yesterday) so I'm thinking the TJ's and Safeways closer in to DC might carry more of the ethnic stuff... who knows, but those two stores did not have it! Thank goodness for Wegmans.
Thanks for the recipe OP. I've tried to make fried rice quick in a wok with as little oil as possible and it stills comes out soggy-do you know what I'm doing wrong? Any tips?

Not the OP, but be sure to use leftover rice (cold/refrigerated) when making fried rice. It will be gummy if you use warm rice.

Not OP or PP, but you need to drain the kimchi really well so it's not liquidy.

As someone who cooks a LOT of Asian food, I am obligated to point out that kimchi fried rice is NOTHING without spam, though. I kid you not, ask your Korean friends.

The Springfield TJs carries it...and it's vegan! Great news for vegetarians and /or Koreans (I'm both)!

Not OP, but I squeeze the juice out of kimchi and chop it before adding.

My TJs sells kimchi in the refrigerated section, in a bag. I've bought it from other regular grocery stores in jars, also just the refrigerated section. TJ's is quite delicious, even if it makes my husband gag when he smells it. Love it.
