we do a snack plate at home as well. it has three compartments and i fill them up with any combination of fruits, veggies, cheese, and/or crackers. the selection changes throughout the week. Now, the kids don't raid the pantry or fridge anymore, we eat more healthfully, I'm no longer a short-order cook, and i use up what i've bought at the store. it's not perfect, but it's been a positive change in our kitchen.

Can u give him a healthy snack to tide him over until dinner is ready....if he is that hungry it won't ruin his appetite.
My kid was like this at 3 -- except she ate all of her lunch...she's JUST HUNGRY...still is at 7....and we do a snack when we get home...most nights...

I also put out the raw veggies, along with humus. Don't forget pea pods and blanched green beans, whole. I have two elementary age kids, and if I only give them a light snack or no snack right after school on the playground, they really go after the veggies during homework hour.

We do quesadillas every week. I usually put in some chicken (leftover or rotisserie) or bacon, and then cheese, and corn. Then I do another veggie on the side (because it's not that much corn in the quesadilla). Super quick and easy. My kids call them "flat sandwiches!"

Use technology! If your rice cooker has a timer, fill up the rice/water in the morning and set it so it's ready when you come home. Put your slow cooker to work for tender juicy chicken with root veggies, ready when you are ready.

I've also pre-made different menu components: cook pasta, broccoli, and pieces of chicken separately the night before. When we get home, I pull them from the fridge and I saute them all together with a little garlic and olive oil. Takes 10 minutes, tops. You could also make fried rice with the same method.

Or, like you said, cook the food the night before and just heat it up once you get home. We cook double dinners 2-3X a week. We reheat leftovers on the opposite days.

Love the idea of serving them raw veggies while you cook the rest of the meal!
