Cool off the cupcakes, and your DC can definitely eat with his hands. They hold together beautifully.

To the lasagna cupcake poster - were you able to eat them with your hands, or did you have to use a fork? They sound yummy, but wondering how my 2 year old would eat them.

I'm cooking the Enchaladas tonight. I did the full calorie count on this casserole because at first glance I thought this dish would be HORRIBLE for you. If you cook it as directed, the total calories are 1869.

Not bad, because you could get 4 very piggish helping, but 6 helpings would be eating in moderation.

I'm going to eat 1/6th, not bad 311 cal. I'm having veggies ont the side.

I am not the poster who made the quinoa casserole, but if you are into quinoa, I made a beef, potato and quinoa soup last night that was delicious.
