Shepherd's Pie is a favorite in our household. I brown ground beef and put in one packet of Lipton Onion Soup mix per pound of beef. Put into a casserole dish. Sprinkle frozen peas and carrots in a layer, then make a pot of mashed potatoes and cover. Sometimes I put fried onions (like French's or Durkees) on top, sometimes sprinkled with finely shredded white cheddar cheese (makes that nice golden cheesy crust) and sometimes just pats of butter. Everything is completely cooked, so just bake until warm and top is toasty brown.

I really like the way they cook the potatoes here (I added some chopped onion while browning them in the skillet though), and I've used regular breakfast sausage instead of chorizo. Trying to remember how many eggs I cooked last time--think I started with 8 or 9 then added 4 more, and 2 medium baking potatoes and a pound of sausage. It was a little too much sausage for me. Made about a dozen, but DDs and I ate some of the stuff while we were making them, so it was a pretty inexact process.

When I made a big batch for freezing, instead of adding each ingredient to the tortillas separately, I threw everything into a big mixing bowl (potatoes, eggs, sausage, grated cheddar, and a half jar of mild salsa), stirred it up, and scooped it onto the tortillas. Skipped the cilantro and scallions since I wasn't sure how they would freeze. Rolled them up then wrapped each in foil and put them all into a freezer bag. About three minutes in the microwave wrapped in a damp paper towel was just right to reheat them when frozen, but I have a wimpy microwave, so start with 2 minutes, flipping it over after a minute.

I love these meatballs. I just made a batch of them for my in-laws yesterday, as a matter of fact. I've never made the pepper sauce though. I just pour marinara over them when I bake them. You can easily portion them out and freeze them. Very tasty! And you don't need to use fresh thyme, either - just halve the amount and use dried.

Don't be put off by the picture on the website - it looks like it belongs on that 70's recipes site!
