OP here. So I got all ambitious over the weekend (yes I'm still using up quinoa). I made Quinoa latkes.

Basically I just scooped quinoa into a bowl, added salt, pepper, chopped green onion, some flour, a spoonful of baking powder, and an egg, smooshed it all together and fried little patties in about a half inch of canola oil. The texture was really nice! I convinced my son to eat them by serving them with ketchup.

You all are so ambitious. I like to use my left over Quinoa the next morning for breakfast. I heat it up in the microwave and add some blueberries and coarse sea salt. If I'm feeling dehydrated I might also throw in a little butter.

There you go - the lazy woman's leftover quinoa solution!
