Actually, that's what they say-that the water is different. I grew up in Philly and they really do have different bread there-especially when it comes to Italian bakeries.

Also, not in SS area and they are a bit of a hole on the wall but, Philadelphia Water Ice on Georgia Ave (accross from Howard University) comes the closest to an authentic cheesesteak IMO. But I haven't tried Philadelphia Mikes, been tempted, so it is good to know that it is good.
