Tonight we had roasted turkey breast (I grabbed a rotisserie one on the way home from work), cranberry sauce, steamed broccoli & tater tots. My kids love cranberries & will eat a ton of turkey if we have cranberries with it. I had zero time to make dinner before heading back out tonight, so this worked for us.

Great ideas! here's my week plan:

Monday: Veggie burgers, cheesy cauliflower
Tuesday: Lentil soup with ground pork
Wednesday: Quinoa w/ roasted veggies, chicken sausage, goat cheese
Thursday: Chicken breasts with goat cheese and green pea sauce, salad
Friday: Quinoa pasta with parm., ground beef, spinach, and red sauce


Can you share the recipes for any of these? Or can I come over for dinner a few nights this week?

Just got out the frozen ground turkey for tomorrow's dinner. I make great turkey burgers, and I make them tiny, using those little bakery rolls for buns, often with a smear of goat cheese. The kids love these-- they get a kick out of asking for seconds like a grown-up. The actual grown-ups eat three or four.

Sides will be some kind of steamed vegetable, and freezer fries. Though I usually skip the fries (just not a fan) and have a small salad. I keep a tupperware full of washed, torn-up lettuce in the fridge, and another of pre-chopped vegetables to throw on it. It's my go-to snack. Not that you asked.

My kids (5&3) eat this. Between the teriyaki and caramelization of the squash, it offers enough sweetness for them to like it.

Teriyaki marinated pork tenderloin and caramelized butternut squash. This is my uninspired go to since we keep the tenderloins in the freezer.
