Bangers and mash last night because I had both sausage and mashed potatoes I wanted to use up.

Tonight is probably chicken soup because I woke up with a sore throat.

Ha, I saw lots of my weekly menu on here already! Naan pizzas for the long day, general tso's for a WFD day since it's a little more involved (air fryer is a game changer for making from scratch), and some kind of taco assembly.

Tonight is hoisin chicken lettuce wraps. Tomorrow is black bean burgers and caprese salad.

I think DH may be making frozen dumplings and stir fried green beans.

Tomorrow and Thursday I'm doing sag paneer and probably spaghetti and meatballs. We do have some pizza dough that probably won't last all week, but not a full dinners worth, not sure when to make that.

Tonight (Tuesday) I'm on my own so it will be a charcuterie plate (what everyone was debating as 'girl dinner' on the other thread) or a storebought tourtiere and caesar salad.

Tomorrow we're going out.

Thursday will be leftover veal marsala and pasta from Saturday night.

I have yet to figure out the weekend.

I made cornbread and soup beans last night. Tonight I'm slicing the leftover cornbread in half so it's thinner, piecing it together in a dish, and making a tamale filling to put on top of the cornbread. I'm baking the whole thing into a "pie" and putting out a toppings bar. I'm selling it to my family as a riff on taco Tuesday, but really I need to use up the cornbread.

Chicken pot pie (made with a pulled apart rotisserie chicken and lots of carrots, celery, onion, peas and boxed pie crust)
Kale chopped salad out of a bag
Strawberries

Very easy meal aside from all of the chopping which I did last night while watching TV. 😊

Pigeon peas-sprouted mung daal with garlic-asafoetida tempering
Cabbage-potato-green onions stirfry
Paneer-bell pepper-onions-tomato-cilantro sabji

I have a bunch of produce in the fridge that I need to cook before they spoil, and I am in no mood to eat veggi soup.
