Same. I want to eat more beans, or more accurately, I want to like beans more. But they just don't hit right as a primary.
I love the Alison Roman recipe for chickpea/ coconut milk/ tumeric soup, but I need to add vegetables so that I'm not just chewing my way through a bowl o' beans. Same with all the indian dishes for lentils etc. It has to be like half cauliflower or squash or something. LOVE homemade baked beans... next to a main dish that is not beans.
I make black bean burgers and falafel regularly. Both of those are at least half something-other-than-beans. Bread and lettuce and tomato and cheese and onion, in the case of the bean burgers. Herbs and onion and garlic in the case of falafel (I make it from scratch and load up on the not-bean ingredients.)
