Lemon ricotta pancakes

In place of sour cream in baked goods. I did a chocolate chip cake with ricotta last weekend.

All these suggestions make me want to go out and buy more.

Recently made pancakes from a pint never used. Then froze them for future breakfasts.

Bon Appetit has a recipe for raspberry ricotta cake, and it's really good.

Whipped ricotta! Serve with bread or veggies. My recipe is from my favorite restaurant in Philly - it’s just a tub of ricotta, salt, 5 tbsp cream or whole milk. Use an immersion blender to whip it until it’s smooth. They serve it with a pool of olive oil and a jam condiment on the side.

I spoon it into a bowl, drizzle on some honey and sprinkle a tiny bit of nutmeg on top. So good.
