A rotisserie chicken from the grocery store, a veggie side of steamed/roasted veggies (just ever so slightly undercooked so they can be microwaved) and potatoes/rice. Maybe a little treat for dessert.

A simple roasted chicken in a disposable aluminium pan is so easy. You could do a whole, or to make it even easier, do pieces. Make 2 pans, one for your family, one for theirs.

Here is a simple recipe. Make a salad (no pre-made bagged salad) and a pan of brownies.

One bowl, easy homemade brownies:

Or Peruvian chicken.

Pp again. I had a friend drop off roasted chicken from Whole Foods or Giant when I first had a baby. And it was such a nice and appreciated gesture. So don’t complicate your life, anything that they don’t have to plan for or get would make it easier. And get one for yourself as well to make your life easier that evening.

I think chicken divan suggested above is great. It’s easy to prepare. In my experience, baked ziti and lasagna are really common, so I think chicken divan is a nice change. Personally, I’ve also brought a vegetarian chili which is easy to reheat.

Meatballs! Chicken parm meatballs, chicken piccata meatballs, sundried tomatoes chicken meatballs — easy to make even if you’re not extremely confident in your cooking, and given that you’re busy with elder care, you can make a large quantity at once so you have a meal for yourselves as well and one for the freezer. Also — they freeze well.

OP, you're very kind. I would do a lasagna or a roast chicken with salad and cookies or brownies.

Several factors go into this and it depends on who your friends are, but I trust all of my friend’s kitchens and cooking abilities so anything would be welcome however, I would love to receive a good homemade soup.

Chicken divan is a good option for a meal train. Baked pasta if you don’t trust your cooking ability.
