I spend about 2-300 each for a few gifts on both, maybe a little more on daughter because she has more wants and then give a joint check for 500.

what does what kind of economic class the significant other’s parents are in have anything to do with it?

Please give what you want and can afford. The seriousness of the relationship I might pay most attention to (ie 2 months or 2 years, near engagement or new.)

The same that youre giving the son. My parents give $100. I have 4 siblings and all married so that's $1000. They pick gift cards specifically for each person.

Why give them money at all? It says spouse. So give the spouses a joint house, foo, or experience gift.
Gift card to a store you know they like. Meat or fish delivery gift. Theater tickets.
