Be careful about throwing that assumption around. There are lots of lawyers and academics who become authors and they are extremely disciplined and productive. Baldacci and Grisham write their own books.
I enjoy several authors who put out 2 short books a year. It's possible they use a ghostwriter, but the books are inexpensive (like $5 to $8 for an ebook) so it's hard to see the profit model where you could pay multiple people. I think they're just very disciplined and treat writing like a job - not just the full time hours but the planning and project management aspects.
Doorstops like Wheel of Time took years between installments. The author had an assistant keeping track of the details and his wife's editing was a huge factor in his success, but they weren't ghostwriten.
