Do you have an Instant Pot? I found out by accident that cooking chicken in the IP creates delicious broth.
So, put a cup or so of water in the IP, put the drumsticks on the grate, and cook the chicken. Remove the chicken and most of the broth. Either in the IP or in a frying pan, sauté the onions in chicken fat or a tiny bit of butter or avocado oil until they’re translucent— or longer. Take the skin and the bones off of the chicken. Throw the skin out, and decide whether or not you want to add the bones to the soup pot for flavor. (I personally would cook the noodles a bit, and drain them before adding them to the pot. I would also sauté the chicken with the seasonings. You can skip these steps if you want.)
Add several cups of water, broth and stock to the IP, along with the vegetables. Cook on pressure for a few minutes to cook the carrots and the celery. Remove the bones — if you added them, then add the seasoned chicken and the al dente noodles. Cook uncovered if you like some bite to your noodles, or covered if you don’t.
