Black bean salad.
Black beans, avocado (cut up) , chopped red onion, frozen roasted sweet corn (or fresh or canned), red and green pepper (jalapeño if you like the heat), a ripe mango chopped/cubed (bits bigger than the onion), quartered cherry tomatoes, cut up roasted broccoli if I have it leftover from the night before, cubed cheese (mild flavor whatever I have on hand -cheddar, havarti, feta…)
Mix olive oil and balsamic vinegar with a bit of honey and stir in to the above.
Salt and pepper to taste.
