I love rye, but the seeds can be a problem, and actually a good rye is crusty and can be hard to chew/bite if your dental situation isn’t great. Also, you’re trying to appeal to the broadest demographic in these meals.

I'd not do the lettuce. They will likely go into a bag lunch and who knows how long before it gets eating. Lettuce will be limp at best.

I would spread soft real butter on the bread. Not only does it keep it from absorbing moisture, it also tastes great with roast beef, just like butter goes well on a sizzling steak.

there’s seems to be a 50-50 split on people that actually like IME it so when making it for others go with the more neutral flavor.
