I always figure that Sunday is the day I grocery shop and have the most time to cook. It's also when the whole family is most able to sit down together. So I like to make something homey: often meatloaf with mashed potatoes and vegetables, or spaghetti and meatballs.
I make a LOT of meatballs. So Monday could be meatball sandwiches.
Tuesday: After two days of red meat, something vegetarian: black bean soup, quesadillas, etc.
Wednesday: Grilled chicken, a starch from the pantry -- rice or couscous, steamed broccoli or green beans
Thursday: Homemade pizza made from Trader Joe's dough
Friday: Kids are likely to be out and about (they are teens). DH and I will eat leftovers or go out.
Saturday: Something easy -- grilled cheese, chicken caesar salads, salmon, etc.
