Pine nuts and pesto would be fine.
You can make pesto with any kind of nut, and all the variations are tasty in a pasta salad. Need to make sure no one is allergic, obviously.

I think nuts sound great. Crunch and protein. If pine nuts are OK why not other nuts. I would totally put cashews in a peanut noodle salad.
As long as you don't put nuts in my brownies. That's a jailable offense.
