Pack some bagged salad mix, some deli meat and/or grilled chicken, a selection of cheeses, crackers, and rolls. You can decide how to eat it when you get there (heavy on salad if feeling healthy, heavy on the meats and cheeses if feeling super hungry).

I think most restaurants will be closed by then, so I plan to pack food for dinner that night. In the past I’d have brought a frozen lasagna and bagged salad, but we’re trying to eat healthier, and I know the vacation will have plenty of other times we arent, so I’d prefer to start out on a lighter note.

I know I could pack sandwiches but that idea bores me. I dont want to stop for dinner on the drive down both bc we’ll be eager to get there and bc the roadside options will be crap.

Any ideas? Thanks for your suggestions.

This is an odd suggestion


I didn't make that suggestion, but if you bring an instant pot down with you, that is one of the easiest dinners to make. You basically dump everything in (including the pasta, sauce, and enough veggie broth to cook the pasta) turn the pot on and set it for around 5 min. Once it's done, release the pressure and you're ready to eat.

I would stop and get a quick dinner when you make a bathroom and gas stop. Or I would have a cooler packed with sandwiches or bowls. But I would absolutely not want to make dinner when I arrived anywhere after 9pm. I wouldn’t want to deal with it and I wouldn’t want to eat that late.

Do you have kids? There are plenty of things you can pack that aren’t too unhealthy. Given your travel schedule I think you need to give yourself some slack on the travel day.

Pack a big salad with protein since you don't want to stop anywhere. Or pack a charcuterie tray you can eat onthe way.

We always go out to eat. Part of a vacation for us is not cooking. The rest of the week we have a personal chef/dine out.

I would eat at a normal time and pick a healthy option like sweetgreen or other vegetable heavy meal.
