Leftover salmon makes really good salmon cakes — just add egg, bread crumbs, scallion and curry powder and fry in a little butter. Then eat it on a brioche bun with sliced tomato like a burger. Something like an aioli or mango chutney is really good with it too.

My kids won’t eat soups but when I was single I used to make fish chowder all the time. It’s really easy. Basically sautee some red pepper and onion. Take that out of pot, make a roux, then add more milk to thin it to chowder. Add chopped white fisk like cod or similar, add the veggies back and let it cook until the fish is cooked through. Salt and pepper it too. So good with just some warm bread and takes less than half an hour.

Sorry you don’t have access to good fish. I know it’s negatively impacting people all over the world.

Lay off all the sauces. People like to mask the flavor of fish for some reason.
I would just change up your sides.
My husband makes a basic grilled salmon with olive oil, salt and pepper. It is absolutely delicious. I never order salmon when I'm out because it always disappoints.
