Yep, bacteria isn't going to magically appear at exactly 1201am and therefore it has expired today.

The dates are there as a CYA for the company bc they can't guarantee freshness, texture, and taste will last forever so they stamp a semi-arbitrary date on there to err on the side of caution.

Yeah seems pretty processed for turkey. But open bag, sniff test, and if not too ammonia smelling or foul, you can cook in a pan or whatever. Cooking in a plastic bag, hello microplastics!
