Thank you! Any advice for the protector? Sounds like some of them might have a plastic-y feel.

leave time for off gassing. check with kid's college if this needs to be encased - it doesn't meet my kid's college rules regarding "fire resistant"

This will depend on the college - at this point, most do have those crappy thin plastic enclosed mattresses, so we bought a 4inch mattress topper with straps that kept in in place, a mattress cover (which covered the mattress and mattress topper), twin XL bedsheets, twin comforter and pillows. My dd was very comfortable and the mattress cover is nice to have, IMO, to protect the topper, esp if you invest in one of the more expensive ones (which you do not have to do, but we knew dd would be using this all four years, so we did). But check on their college dorms specifically - if your child is at WashU, for example, they will have a Tempurpedic mattress and have no need for the topper.
