Whether or not you think her job is "easy" is not relevant. What matters is the value that she is providing and the market for an alternative provider. Can you find another part-time nanny to work from 2-7 who will not ask for a raise or extra time off? Then hire that person.

I do always roll my eyes when people describe a job they are paying someone for as easy or when people emphasize how easy their kids are. That just downplays the work of caregiving

I don't give our nanny any additional paid time off because we travel 4-5 weeks a year, and we still pay her for that time, and let her know well in advance so she can plan her travel accordingly. If she takes off a day here and there for sickness or a special family event, we just let it go. If she wants to go out of the country for 3 weeks in a way that disrupts our schedule and I have to hire other help, I don't pay her (I mention this because it happened once).

Completely unreasonable on your part. Our PT nanny has guaranteed hours. Our vacation isn't even really counted into her PTO. She knows we take 2-3 weeks off and she's paid no matter what. She gets 10 days PTO of her choosing and 10 sick days. I think she's only ever used 2 sick days and she's always worked with us on taking her PTO. We treat her well and in return she's worked with us for years and has been flexible with us when a couple things have cropped up.

It is very difficult to find someone to work from 4 to 7 who is reliable.

I’d give her the third week off paid and give her a raise.

Don’t you and your husband get a raise each year?

Yes you are being unreasonable. You need to pay her 52 weeks out of the year and yes one week should be of her choosing.
