I'm guessing your accommodations are already booked, by I highly recommend a stay at Ashford Castle. The Irish School of Falconry is there and they do lessons and demonstrations. My sisters and I all loved it when we went as teens. You may be able to visit the grounds and do the falconry stuff without being a guest, I'm not sure.

We are irish living in the US but visit home frequently, kids are 16, 14 and 9 and these are some of the things they have enjoyed when visiting Ireland (besides playing/hanging out with cousins and friends). going to hurling match, shopping at Penneys or on Grafton St, Avondale Beyond the Trees in Wicklow, Rock of Cashel, Titanic museum in Cobh, Fota Island, Emerald Park (formerly Tayto Park - not a huge amount of thrill rides but still fun) kayaking on rivers, biking greenways in our local area, various hikes in forests/mountains like Slieve Gullion, Donadea Forest Park, Castlecomer, Glendalough.
surfing lessons in Kerry, glamping on Inis Mor. mine like to golf too. They like hanging out where other Irish kids are so things like GAA matches and lessons for various activities are good.

I really love doing the Diamon Hill hike in Connemara National Park.

Trinity and the library, Guinness factory tour, whiskey barrel tour, titanic museum (even if you’re not into that, it’s really well done), maybe a stay at ashford castle for a night or two, the Dart to Dalkey for brunch and a walk on the coast, paddle boarding if nice weather, Grafton street in Dublin, a Gaelic football or Irish league match…
(Dh is Irish and we have a place there and these are some of the things our teens enjoy)

We did a Hawk Walk with Dublin Falconry that the teens really enjoyed and had great pictures.
If you don't mind a steep hike my one teen really liked Kinbane Castle in Northern Ireland...the younger teen refused when she saw the steps and stayed up at the top.
