I'd go to Ibiza. It offers both vibrant culture and chilled-out relaxation. And accommodation for all budgets. Hire a car and explore the coast - there are lots of small coves, each with a beautiful beach and a feeling of privacy - but still usually with a small beach bar selling drinks and snacks and sometimes even beach showers to wash off after a swim in the gorgeous turquoise sea. If you want somewhere even more exclusive, take the ferry from Ibiza to Formentera - that small island really is a paradise.

I’m with you on the museums, but I’ve been there several times and have had a lot of lackluster meals, despite my efforts. Even my Dutch friends say it isn’t known for that. Copenhagen on the other hand…

Agree. You don't go to Amsterdam for the food.

The only really good food in Amsterdam is Indonesian.

1. Northern Spain/West Coast of France. San Sebastian, Bilbao, and Biarritz. You could do 2 nights in each of them.

2. Provence. Tons of options. The larger cities (Aix for example) get crowded during the day but there are so many smaller towns to explore.

3. Lisbon and Comporta. Comporta is a cool beach area 1 hour south of Lisbon. There are a few boutique hotels or houses you can rent.

DH will actually be in Bulgaria before London, so it doesn't make sense for us to go back to that side.

Spain or Portugal would be lovely. Madrid or Barcelona with day trips by train, for example.
